In celebration of 28 years of brewing bold beer in the last frontier, 28 Imperial Pale Stout is a bold expression on a style that has less than bold guidelines. Our approach was to highlight the intense flavors of an imperial stout, with a target appearance in color that is in between a pale and amber ale. In the brewhouse we ran a 5 hour boil to create more body and depth. Once fermentation was complete, we aged this beer for a few months in Heaven Hill Rye Whiskey and Woodford Reserve Bourbon barrels. Since there are no roasted or caramel malts in the grain bill, we added toasted cacao nibs, vanilla beans, and Guatemala, Waykan cold brew in the mix from our friends at Kaladi Brothers Coffee to reinforce a warming spice with notes of raisin & chocolate.
