Boreal Trippel is a Belgian Tripel that has a pronounced malt sweetness and high ABV. Expect mild spicy phenols with fruity esters and a sweet finish. Brewed with orange peel and coriander to round out the flavors, Boreal Trippel has a fruity ester profile that is typical of a Belgian yeast fermentation, but with little bubblegum/banana aromatics, creating a crisp, clean Belgian Tripel. Sticking with references from the great tv show Trailer Park Boys, our latest and greatest Hazy IPA, Friends With Benedicts has a unique aroma/ flavor profile that’s sure to have you question, “Who are the Benedicts?”. This Hazy IPA imparts aromas of tangerine, coconut, and tropical fruits from both mash and post boil whirlpool hop additions. We then fermented with Omega Yeast Cosmic Punch strain to help unlock all these flavors and maximize this tropical profile. Add in a double dry hop and we’re all saying, “Maybe we could become friends with benedicts!”

Manic

A pilsner on steroids. Starting with a simple grain bill of pilsner and wheat malt, we added dextrose to raise the starting gravity and help encourage a dry, crisp finish after fermentation. Four different hop additions during the boil of Citra and Ekuanot bring a bitterness and strong hop flavor typical of a Double IPA. Both hops are American varietals that produce strong citrus and berry aromatics, Ekuanot imparts strong papaya and lime notes, while Citra adds grapefruit and passion fruit aromatics. Big School Words

Biotransformation! Thiolized! Big School Words! This new hazy IPA is full of big flavors and aromatics! Starting in the mash tun, we mash hopped with Cascade and Saaz hops. This technique is called mash hopping and when applied in the brewing process, helps convert thiol precursors into a form that makes it possible for fermentation to generate rich, tropical aromas. We then added in Simcoe and Motueka hops to the whirlpool, to maximize aromatics and minimize bitterness. Fermenting with Omega Yeast Cosmic Punch Ale, this strain aides in generating thiols through biotransformation, releasing tropical aromas. Biotransformation of hops is a process by which yeast change less desirable hop compounds into more desirable bold flavors and aromas. Thiols are highly impactful aroma compounds that evoke grapefruit, passion fruit, and guava. Once fermentation was rocking, we did two dry hop additions of Mosaic, Simcoe, and Motueka hops, further adding juicy, tropcial aromatics.

It’s Summer, No, It’s Winter, It’s Raining, No, It’s Snowing. It’s… Sorta Summer, and we’ve brewed the perfect beer for the season shift. Much like the bipolar weather we experience this time of year, Sorta Summer is seasoned in multiple styles, marrying the light easy drinking nature of pale ales with the bold balanced flavors of Belgian beer. While Belgian Pales Ales are typically a restrained version of what many drinkers associate with Belgian style beer, our Imperial version is a free bird flying above the norm. At 8.5% alcohol, this pale ale boasts an alcohol warmth that’s far from pale. Caramunich offers a nice malt sweetness with hints of caramel & toffee that complement toasted notes from the grain bill. Using a lower fermentation temperature helped us produce less esters and control the flavors, maintaining the incredible balance and easy drinking nature of the original style. Keep it cool and warm up with our latest & greatest Belgian brew, Sorta Summer.
